Ingredients
- 4 cucumbers
Dressing
- 1 tablespoon soy sauce
- 1 tablespoon chinese black vinegar / malt vinegar you can also use Apple Cider Vinegar or any dark vinegar
- 1 teaspoon toasted sesame oil
- 1/2 teaspoon freshly chopped chillies optional (the chef has used red chillies)
- 1 tablespoon toasted sesame seeds
- 2 tablespoons spring onion finely chopped
- 1 tablespoon honey
- salt and pepper to taste
Instructions
- Smash the cucumbers with a rolling pin or the back of pan or a cleaver.
- Once smashed, roughly chop into smaller pieces.
- Sprinkle with a pinch of salt, toss and set aside for 20 minutes to let it drain.
- Mix all the dressing ingredients together and check and adjust seasoning.
- Once the cucumbers have drained mix the dressing ingredients into the cucumbers and serve.
