Snoop Dogg popularised a recipe for Billionaire Bacon in his cookbook “From Crook to Cook”. It’s bacon strips coated in brown sugar, red pepper flakes and black pepper powder and baked.
What is Better about this Better Billionaire Bacon?
This recipe is the chef’s take on Billionaire Bacon, and it got an upgrade! Chilli, black pepper and garlic infused hot honey coat perfect crispy bacon and sumac adds a zesty kick. Sweet, spicy, and tangy all in one bite!

We collectively owe a lot to Snoop Dogg. He gave us bangers like Drop It Like It’s Hot and Gin and Juice, which changed the 90s hip hop landscape. What we didn’t expect was to owe Snoop Dogg for changing our cooking landscape. Snoop Dogg is the master of surprise.

Better Billionaire Bacon was inspired by Snoop Dogg’s recipe in Crook to Cook (which is a great name for a cookbook). Snoop Dogg uses brown sugar and chilli flakes hitting those sweet and spicy notes. We use hot honey and sumac. Better Billionaire Bacon hits all the flavour notes – it’s sweet, spicy, salty and the sumac adds a zesty sourness. That’s why its Better.
Because billionaires never compromise on their bacon, why should you?!


Gather the Ingredients


Make the Hot Honey with Sumac
Mix together honey, cayenne pepper powder, black pepper powder and sumac.
Brush over the bacon strips and lay the bacon strips on a baking tray



Bakin’ Bacon
Cook the bacon strips in the oven at 180℃ / 360 ℉ for 5 minutes.
Take out and brush the bacon with the remaining hot honey.
Return to the oven for another 5 minutes.

- Use any type of bacon you like – streaky or thick cut, just adjust the cooking times accordingly
- You can use a less spicy alternative to cayenne pepper like paprika powder
- Leave the bacon to cool slightly after cooking, it will crisp up perfectly

Better Billionaire Bacon
Equipment
- Oven & baking tray
Ingredients
- 8 strips of streaky bacon or thick cut bacon
- ¼ cup honey
- 1 teaspoon cayenne pepper
- 1 tablespoon sumac
- 1 teaspoon black pepper powder
Instructions
- Preheat the oven to 180℃ / 360 ℉
- In a mixing bowl mix ¼ cup honey, 1 teaspoon cayenne pepper, 1 tablespoon sumac, 1 teaspoon black pepper powder.
- Lay the streaky bacon on a baking rack with a baking tray underneath to catch the oil
- Using a pastry brush, brush half of the hot honey mix on both sides of the bacon strips
- Put in the oven for 5 minutes
- Remove from the oven and brush with the remaining hot honey mix on both sides.
- Turn over the bacon and put it back in the oven for 5 more minutes
- Take out of the oven when it looks cooked and crispy
- Leave outside to cool slightly and crisp up. Serve and enjoy!
