Let me put away all my quirky food characters for today. Let’s get real.
One of the first things Nelson made for me when we got together was a chicken mayo sandwich. Really. It wasn’t a five course meal with exotic ingredients, it was a humble sandwich with leftover chicken. And it was the first time I understood I was in the presence of a master. Because at that moment, I realised if he could make a simple sandwich taste this amazing, I could only imagine what he could do with the fancy stuff.
You know how chef’s train for years to make the perfect omelette? It’s because doing the simple stuff perfectly is the real challenge in cooking.
Yes, this is a chicken mayo sandwich but it’s so much more than that. It’s got crunchy, toasted buttered bread (sourdough recommended because it gets perfectly crispy on the outside and stays chewy on the inside), and the creamy rich filling is perfectly balanced between sweet and savoury. This sandwich is a world of contradictions – it’s crunchy and smooth, sweet and savoury, warm and cold and altogether incredibly moreish.
In the documentary ‘Jiro Dreams of Sushi’ (which I highly recommend) the apprentice chef trains for ten years before he is allowed to make the egg sushi for the master. You don’t need to train for ten years to make an amazing sandwich. You have the recipe right here.

Make the Filling
Mix the chicken, mustard, mayonnaise, honey and add the lemon and hot sauce, if using.
Toast the bread with a generous amount of butter or olive oil.
Serve and Enjoy!
Put the filling on a slice of toasted bread and cover with the other slice. Bon Appetit!
- You can really customise this recipe. Try swapping the mustard out for wasabi, horseradish paste or any store bought dressing like honey mustard. Add hot sauce if you like it spicier.
- Sourdough is perfect for this recipe, but any soft untoasted dinner roll / Hawaiian roll works great as well.
- If you’re toasting the sourdough slices on a pan, brush both sides generously with butter / olive oil and use low to medium heat to crisp up both sides. This process will take longer but will give you a really crunchy outside with a chewy inside.

Ingredients
- 4 slices good sourdough bread
- 2 cups roast chicken or rotisserie chicken shredded
- 3 heaped tablespoons egg mayonnaise *the chef recommends Kewpie mayonnaise
- 1 teaspoon mustard* / wasabi / horseradish paste *the chef used hot English mustard
- 1 cup lettuce, any variety, finely shredded *the chef used iceberg lettuce
- 1 teaspoon honey
- 2 tablespoon butter or olive oil to toast the bread
- A dash of Tabasco / hot sauce of your choice *optional
- ½ tablespoon lemon *optional
- Salt and pepper to taste
Instructions
- Mix 2 cups roasted shredded chicken, 1 teaspoon mustard, 3 heaped tablespoons mayonnaise, 1 teaspoon honey and add ½ tablespoon lemon and a dash of hot sauce, if using.
- Add 1 cup of shredded lettuce, taste and adjust the seasoning.
- Toast the buttered slices of bread in a pan on low to medium heat, until crispy and brown on the outside.
- ORButter both sides of the bread and put in a preheated oven at 200℃ / 400℉ for up to five minutes or until toasted. Remove from oven.
- Put the filling on a slice of toasted bread and cover with the other slice. Serve and enjoy!

What lettuce do I use for this recipe?
You can use any variety of lettuce. The chef has used iceberg lettuce, but if you want something more peppery, try arugula.
Can I make this ahead of time?
If stored in an airtight container, the filling will last up to 5 days in the fridge. Add the shredded lettuce just before toasting the bread or it will get soggy.
What can I add for extra flavour or texture?
Adding avocado slices, crispy bacon, or spicy ingredients like sriracha can elevate the flavor. For texture, toasted nuts or roasted veggies work beautifully
How do you get perfectly toasted sourdough bread?
To toast sourdough bread to perfection, start by slicing it about 1/2 to 1 inch thick. For a crisp, golden exterior, preheat your oven to 200°C / 400°F or heat a skillet over medium heat. Generously brush both sides of the bread with olive oil or butter to ensure even browning.
For the oven: Bake for 3-4 minutes per side on a baking sheet or directly on the oven rack.
For stovetop toasting: Toast each side in a hot skillet for 2-3 minutes until golden and crispy.
Keep an eye on the bread, as sourdough can burn quickly if left too long.
