Mushrooms are the odd ones out at a party. You think I’m setting you up for a ‘they’re a fun-ghi’ pun don’t you? Not this time. They really are different. They’re not even a vegetable. Wikipedia describes mushrooms as a fleshy, spore-bearing fruiting body of a fungus. Yum yum.

So maybe mushrooms weren’t invited to the vegetable party because of their type. Maybe they don’t fit in because they are better than everyone else, and all the vegetables know it. Mushrooms are good for everything, morel less (sorry, couldn’t help myself). They help with lowering blood pressure, losing weight and even boosting the immune system.

This recipe brings together assorted mushrooms in a bright garlic butter dressing. It’s so simple and so good. The dressing is really what elevates these funghi to real champignons (sorry again). It’s restaurant level good, and you can make it in under 10 minutes.

Gather the Ingredients

Sauté the Ingredients

In a very hot pan add mushrooms and cooking oil with salt, nutmeg and black pepper powder. Stir so the mushrooms mix with the salt and pepper then leave them in the pan for a minute without stirring it – this will help slightly brown the mushrooms.
Add the garlic and butter.

Serve and Enjoy!

Remove from the heat, top with chopped parsley and the juice of half a lime and serve.

Ingredients
  

  • 500 grams assorted mushrooms
  • 2 tablespoons minced garlic
  • 1 teaspoon crushed black pepper / black pepper powder
  • ½ teaspoon nutmeg, ground
  • 2 tablespoons parsley, chopped
  • Juice of half a lime
  • 2 tablespoons butter
  • 1 tablespoon cooking oil
  • Salt to taste

Instructions
 

  • Roughly slice 500 grams assorted mushrooms
  • In a very hot pan on very high heat add 1 tablespoon cooking oil. Add in the mushrooms with salt to taste, ½ a teaspoon ground nutmeg and 1 teaspoon crushed black pepper / black pepper powder. Stir so the mushrooms mix with the salt and pepper then leave them in the pan for a minute without stirring it – this will help slightly brown the mushrooms.
  • Add 2 tablespoons minced garlic and 2 tablespoons butter and stir until the mushrooms are nicely browned about 5 – 7 minutes.
  • Turn off the heat, add 2 tablespoons chopped parsley and the juice of half a lime and serve.
