Ingredients
  

  • 4 cucumbers

Dressing

  • 1 tablespoon soy sauce
  • 1 tablespoon chinese black vinegar / malt vinegar you can also use Apple Cider Vinegar or any dark vinegar
  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoon freshly chopped chillies optional (the chef has used red chillies)
  • 1 tablespoon toasted sesame seeds
  • 2 tablespoons spring onion finely chopped
  • 1 tablespoon honey
  • salt and pepper to taste

Instructions
 

  • Smash the cucumbers with a rolling pin or the back of pan or a cleaver.
  • Once smashed, roughly chop into smaller pieces.
  • Sprinkle with a pinch of salt, toss and set aside for 20 minutes to let it drain.
  • Mix all the dressing ingredients together and check and adjust seasoning.
  • Once the cucumbers have drained mix the dressing ingredients into the cucumbers and serve.
